Veggie Burgers ๐Ÿ”

Back for May only to celebrate our 25th anniversary, Epicure VEGGIE BURGERS!


Ingredients


1โ„2 cup uncooked quinoa

1 1โ„2 cups hot water, divided

1 small zucchini

1 pkg Epicure Veggie Burger Mix

1โ„2 lemon

2 tbsp oil

4 burger buns

1 tablespoon Epicure Southwest Ranch Dressing Mix & 1/2 cup mayonnaise

Toppings (optional): lettuce leaves, sliced tomatoes, avocado, cucumber & red onion rings.


Preparation


  1. Place quinoa in Multipurpose Steamer; stir in 1 cup hot water. Microwave on high, uncovered, until tender and water has absorbed, 12โ€“15 min.

  2. Mix together mayo and southwest ranch dressing mix. Place in the fridge until using.

  3. Meanwhile, grate and measure out 1 cup zucchini. Press out excess water.

  4. In bowl, combine mix with 1โ„2 cup hot water. Using the 2-in-1 Citrus Press, squeeze in 3 tbsp juice from lemon. Add zucchini; stir until combined. When cooked, stir in quinoa.

  5. Preheat Epicure Saute Pan over medium heat. When hot, add oil; scoop batter onto pan, making four burgers. Lightly press and flatten into shape. Cook until golden brown, 3โ€“5 min per side.



6. Place patties on bottom halves of buns, then add southwest ranch mayo and toppings.
