Southwest Ranch Salad ๐Ÿฅ—

This amazing salad has a kick of flavour and packed full of nutrients - perfect for lunch or dins!


1โ„2 cup mayonnaise 1โ„2 cup sour cream 2 tbsp Epicure Southwest Ranch Dressing Mix 1โ„4 cup milk, your choice

1 lb chicken breast cut into thin slices

1 avocado, sliced

1/2 can corn

1/2 can black beans, drained and rinsed

1 pint cherry or grape tomatoes, cut in halves

4 cups kale or mixed greens

2 tablespoons Epicure BBQ Chicken & Rib Rub

Optional: microgreens and Epicure Better Than Bacon Topper


  1. In a bowl, whisk together mayo, sour cream, and dressing mix. Add milk; whisk to combine.

  2. If you have time, chill in the refrigerator 1 hr to allow flavours to blend.

  3. In a container or resealable bag add BBQ Chicken & Rib Rub and shake until well coated. Grill on medium high heat for approximately 7-8 minutes.

4. In two separate bowls, divide kale, tomatoes, corn, black beans, avocado and microgreens.

5. Add 1 sliced breast of chicken to each bowl, drizzle Southwest Ranch Dressing and sprinkle with Epicure Better Than Bacon Topper.
