1/2 package rice noodles, cooked
2 avocados, thinly sliced
1 mango, peeled, thinly sliced
1/2 cucumber, thinly sliced
1/2 cup shredded carrots
1/2 red pepper, thinly sliced
1 cup mixed greens
10 rice paper
1 pkg Sweet Chili Sauce Mix
1⁄2 cup water
1⁄4 cup rice vinegar
1 tablespoon melted natural peanut butter.
In 4-Cup Prep Bowl, combine mix with water and rice vinegar.
Microwave on high, uncovered, 2 min, stirring halfway. Let cool before use.
Place in the fridge for at least one hour or overnight.
Place a little bit of hot water on a large plate and gently wet one piece of rice paper- just a little bit of water! Transfer to another plate.
Layer little bits of all of your veggies on one of the short edges of the roll.
Fold edge closest to you over the veggies tightly, wrap sides and roll!
Repeat until complete!
Once ready to eat - melt peanut butter and add to 1/4 of the sauce. Cut rolls in half & serve!
