Mini Shortbread Pop Tarts 🍓

These mini shortbread pop tarts are so easy to make! Perfect for little hands and a great treat for Valentine's Day.

Ingredients Shortbread: 1 package Epicure Shortbread Mix 1/2 cup unsalted margarine 1 tablespoon water Filling: Your choice of jam (we used strawberry) Icing: 1 cup powdered sugar 4 tablespoons whipping cream Topping: Epicure Summer Berry Dip Mix Cookware: Epicure Perfect Petites Epicure Sheet Pan 4-in-1 Spice Spoon


Preparation


1. Prepare epicure shortbread mix with 1/2 cup of unsalted butter and 1 tablespoon of unsalted margarine. Add one heaping 1/2 teaspoon in each mold of the Epicure Perfect Petites that has been placed on an Epicure Sheet Pan.

2. Add 1 teaspoon each of your favourite jam to half of the cookies. Freeze for 30 minutes.



3. Place the "naked" half of the cookie molds on top of the ones with jam. If they’re starting to break. Put back in the freezer - much easier to work with chilled dough.

4. Bake at 375 for about 22 minutes (until golden brown) and let cool completely (or put in freezer until chilled).

5. Meanwhile, mix 1 cup of icing sugar with 4 tablespoons of whipping cream and set aside.

6. Pop cookies out of pan and place on epicure cooling racks. Spoon icing onto each cookie and sprinkle with epicure summer berry dip mix.
