Easy Peasy Lemon Squeezy Tarts 🍋

Epicure's Luscious Lemon Curd is a total crowd pleaser!! Bring this to your next gathering or a treat for your fam- so easy to make and so delicious. Ingredients

1 package Epicure Luscious Lemon Curd Mix

3 eggs

1/2 cup water

1 tablespoon butter (optional)

12 frozen tart shells or 24 mini frozen tart shells

Fresh berries & Icing Sugar for decoration (optional)

Preparation

  1. In an Epicure 4-Cup Prep Bowl, whisk eggs until foamy. Add mix and water; whisk until well combined.

  2. Microwave, uncovered, on high for 2 min, until thickened, whisking halfway through and at the end. If the curd has not thickened after 2 min, cook for additional 30 sec intervals, whisking after each, until desired thickness is achieved.

  3. Whisk in butter, if desired.

  4. Cover; refrigerate for at least 1 hour, or until cooled.

  5. Preheat oven to 375° F.

  6. Place tart shells on Epicure Sheet Pan. Bake for 10–12 min, or until golden.


7. Remove tarts from foil cups. Let cool, then spoon in lemon curd, about 1 tbsp per tart.



8. Decorate with fresh berries and a sprinkle of icing sugar.
