1 pound of chicken breast, cut into strips
2 tablespoons Epicure Souvlaki Seasoning
4 tablespoons olive oil
Juice of 1/2 lemon (use your Epicure 2-in-1 Citrus Press to get all the juice!)
1 sweet potato peeled and cut into discs
2 cups kale, chopped
1/2 cucumber, chopped
1 avocado, Cut into small pieces
Juice of 1/2 lemon
1/4 cup cherry tomatoes, cut in halves
2 tablespoons sunflower seeds
2 tbsp Epicure Greek Dressing Mix
3⁄4 cup olive oil
1⁄4 cup apple cider vinegar
1 tablespoon Epicure Lemon Dilly
1/2 cup plain Greek yogurt
Preheat oven to 375.
Add chicken in single layer on one 1/2 of the sheet pan and sweet potatoes in single layer on the other half.
Mix together souvlaki seasoning, 2 tablespoons olive oil and lemon juice in small bowl.
Coat chicken with souvlaki mix.
Add the remaining olive oil to sweet potatoes with salt and pepper.
Bake for 22 minutes or until chicken is cooked through.
Add your veggies and sunflower seeds to a large bowl.
Mix together olive oil, vinegar, lemon juice and Greek dressing mix.
Add to salad, toss and serve.
Lemon Dilly Dip
Simply mix your Greek yogurt and lemon dilly dip mix together and serve!
