Carrot Muffins 🥕

These carrot cake muffins are easy to make, gluten-free and restaurant quality!! My little guy gobbles them up! Ingredients


2 medium-sized carrots

2 eggs

1⁄3 cup oil

1⁄2 cup unsweetened apple sauce

2 tablespoons coconut (optional)

1 pkg Epicure Carrot Cake Mix

Cookware Epicure Muffin Makers (Set of 2) Sheet Pan

Basting Brush 1/4 Cup Prep Pro Scoop Cooling Racks (Set of 2)



Preparation


  1. Coarsely grate carrots; measure out 2 cups and set aside.

  2. Lightly oil Muffin Makers and set on Sheet Pan.

  3. In a large bowl, whisk eggs with oil and apple sauce. Stir in mix and 2 cups grated carrot and coconut, if desired. Cover with a cloth and let sit for at least 20 minutes.

  4. Bake in preheated 350° F oven for 20 min (ovens may vary). Once toothpick comes out clean - muffins are ready! Cool 10 min before unmolding onto rack.
