Berry Swirl Bites ๐Ÿ“ ๐Ÿซ ๐Ÿ‹

Want a no-bake treat this summer perfect for pot lucks, picnics, bridal & baby showers? Youโ€™ve found it! Easily decorated with fresh fruit or leave โ€˜em plain and theyโ€™re equally delicious


Ingredients


1 package Epicure Berry Swirl No-Bake Cheesecake Mix

1โ„3 cup fresh or frozen raspberries

1 brick (8 oz/250 g) cream cheese, room temperature

1 1โ„2 cups whipping cream

8 graham crackers divided in quarters

Optional: fresh berries, mint & lemons for decoration

Preparation


  1. In a small bowl, combine 1 tbsp mix with raspberries. Microwave, uncovered, 1 min or until hot. Mash and stir together; set aside in the fridge.

  2. Using a stand mixer or hand mixer, beat cream cheese with remaining mix on medium-high until smooth. Scrape the sides of the bowl.



3. Gradually add cream, whipping until soft peaks form.

4. Place perfect Petite on sheet pan.

5. Put one quarter of each graham cracker flat in each mold.



6. Add one level tablespoon of cheesecake mix on Graham crackers and smooth tops.

7. Add fresh fruit for decoration, if using, and a dollop of reserved berries cooled in fridge with mix; freeze for two hours.



8. Place in fridge prior to using and add fresh mint for garnish, if using (Youโ€™ll see I added it before in pics, but it gets wilty - we bake, we learn)!
