Banana Bunny Cake 🍌🐰

This cute Easter treat is simple to make and absolutely delish!


Ingredients Banana Cake


2 ripe medium bananas

2 eggs

1⁄3 cup vegetable oil

1 pkg Epicure Sweet Banana Bread & Muffin Mix

Cream Cheese Icing


1 pkg cream cheese, softened

4 tbsp butter, softened

1⁄2 tsp Epicure Cinnamon (Ground)

1 cup icing sugar

Cookware


Round Pan Sheet Pan

Cooling Racks

Basting Brush


Preparation Banana Cake

  1. Generously oil Epicure Round Pan with a basting brush and place on sheet pan.

  2. In a large bowl, mash bananas; they should measure about 3⁄4 cup. Add eggs and oil; whisk to mix. Stir in mix. Cover for 20 minutes.

  3. Scrape batter into pan and smooth top.

  4. Bake for 20 - 25 minutes in the oven at 350 or until toothpick comes out clean.

  5. Cool on wire racks.


Cream Cheese Icing


  1. In a bowl, use an electric mixer or wooden spoon to beat cream cheese with butter until smooth. Beat in cinnamon.

  2. Beat in icing sugar, one spoonful at a time, until smooth. If making ahead, cover and refrigerate up to 5 days.

Assembly


  1. On a large plate, cut banana cake in half, place icing on top of cake (both halves) and stick together in half moon shape.




2. On one side of cake, cut out a small triangle to form a head for your bunny. Use the cutout for a bunny tail.



3. Frost cake with remaining icing and decorate with ears, eyes, whiskers and Easter decorations (we used sprinkles, a strawberry nose and some homemade construction paper ears).
